Fire up the BBQ this weekend and enjoy delicious and healthy Herb and Garlic Seafood Skewers thanks to this easy receipt from Canadian Living. It’s sure to heat up your taste buds!

Ingredients 

3 tbsp (45 mL) chopped fresh chives
3 tbsp (45 mL) olive oil
2 tbsp (30 mL) lemon juice
1 tbsp (15 mL) chopped fresh thyme
2 cloves garlic, minced
1 pinch salt
 1/4 tsp (1 mL) pepper
16 jumbo shrimp, peeled and deveined
8 oz (227 g) firm white fish fillets, cut in 3/4-inch (2 cm) pieces
1 cup (250 mL) vegetable broth
 2/3 cup (150 mL) couscous
1 tbsp (15 mL) grated lemon zest

Preparation

In a bowl, combine chives, oil, lemon juice, thyme, garlic, salt and pinch of the pepper. Add shrimp and fish; toss to coat.

Meanwhile, in small saucepan, bring broth to boil; remove from heat. Stir in couscous, lemon zest and remaining pepper. Cover and let stand until no liquid remains, about 5 minutes. Fluff with fork.

Thread fish and shrimp onto metal skewers. Place on greased grill over medium-high heat; close lid and grill, turning once, until fish is opaque and shrimp are pink, about 5 minutes. Serve over couscous.
